Mediterranean Pasta Salad w/Fried Egg



Ingredients
  • 1 package whole wheat penne or rotini pasta
  • 2 or 3 eggs
  • 1 large tomato or 2 plum tomatoes
  • 1/4 bunch of fresh Parsley, chopped
  • 1 tea spoon fresh oregano, chopped
  • 1 tea spoon fresh chives, chopped
  • 1 pinch ground cumin
  • 1 pinch coarse sea salt
  • pepper to taste
  • 2 oz Feta cheese, preferably Bulgarian
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp red wine vinegar

Instructions

  1. Boil pasta according to package directions and drain. Reduce cooking time by 1 minute to ensure that the pasta is al-dente
  2. Lay pasta in an attractive dish
  3. mix oil, vinegar, oregano, and chives in a bowl
  4. pour half the dressing directly on the pasta and stir well
  5. Slice tomatoes and place over pasta
  6. Crumble the feta cheese over the tomatoes.
  7. Fry the eggs sunny-side-up, sprinkle with cumin and sea salt
  8. lay the fried eggs over the salad, sprinkle with parsley
